With eggs costing up to $145 a case, she has had to slightly raise her prices. Social media continues to be a major influence in the restaurant industry. Penny has also noticed a trend toward fast-service models where customers order at the counter. However, she considers her most meaningful achievement to be her annual Breast Cancer fundraiser, which has raised over $70,000 for the Jaqualyn Palchak Fund, alongside other causes such as Hospice, Alzheimer’s awareness, Meals on Wheels, and support for a local four-year-old battling stage four cancer.
